It's not about lightening quick. It's about the in-game intelligence to make those runs so that Pogba or someone from midfield can pick him up with a pass. It stretches the defense of the opposition. And in the case of Martial, that does not really happen. Martial prefers to dribble his way which does not work for United. Mbappe fits us as a glove because he makes those intelligent runs and he does it being on the RW which is what we've lacked. So Mbappe would get my vote unless Martial adds that facet to his game.
