What I don't get is that at Ajax ETH always said that losing the ball is fine as long as you retain it in 5 seconds yet I don't see that philosophy at United.

Trying to think of a reason for this. The only thing I can think of is in Europe the game is slower, more teams pass and build up from the back gradually than the UK. Therefore pressing high with high intensity could put teams under a lot of pressure in that context. In England though, teams are more direct as a tendency. Pressing high could potentially be exposed with a good counter attack, the likelihood of which is higher in England than in Europe on average.

Not sure if that’s actually true. But I can see the logic in it.
